The aim of this study is to determine the effect NaOH and KOH on carrageenan. addition natural dyes was carried out with different concentrations carrageenan value viscosity gel strength algae Kappaphycus alvarezii a mixture dyes. samples were taken from cultivation area in Belang waters, Southeast Minahasa Regency. results refined have succeeded giving green color did not affect when compared control (without treatment). 4% concentration 53.34-53.69 cP 49.55-50.03 cP. at 74.11-74.89 mm/g/sec, while 5% it 84.22-84.89 mm/g/sec. still meet standards set by Food Agriculture Organization (FAO).Keywords: Carrageenan, dye, alvarezii, viscosity, strengthAbstrakPenelitian ini bertujuan untuk mengetahui pengaruh dan terhadap karagenan. Pada penelitian dilakukan penambahan pewarna alami dengan konsentrasi yang berbeda nilai viskositas serta kekuatan karagenan dari alga campuran alami. Sampel diambil budidaya di Perairan Belang, Kabupaten Tenggara. Hasil tentang pada carrrageenan telah berhasil memberikan warna hijau tidak mempengaruhi jika dibandingkan kontrol (tanpa perlakuan). Nilai adalah 53,34 – 53,69 sebesar 49,55 50,03 74,11-74,89 mm/g/det, sedangkan diperoleh 84,22-84,89 mm/g/det. Viskositas tersebut masih memenuhi standar ditetapkan oleh Agriiculture (FAO).Kata kunci: Karagenan, alami, viskositas,
